pork schnitzel
1 pork loin sliced thin
flour
italian bread crumbs
eggs beaten mixed with a small amount of water & lemon juice
canola oil for frying

once pork has been sliced, pound out even thinner with tenderizinf mallet ( best done between plastic wrap. Dredge in flour, then in the egg, lemon wash, then in bread crumbs. fry in oil until golden brown! serve with whatecer you want - even great cold on a hard roll!!
